8620 Carbon

When you run out of carbon, you're out of luck.

Your blades become blunt and incapable of slicing through your steak like butter. 8620 Carbon is a high-end alloy steel that’s been proven to maintain its edge for longer, making it the only reliable choice for any chef who needs to cut through a thick cut of beef.

8620 Carbon is nickel-chromium-molybdenum alloy steel with excellent carburizing properties. It is high-performance steel. It is believed that the high nickel concentration contributes to the case’s high strength and above-average core toughness. Carbides develop correctly with the assistance of chromium and molybdenum, resulting in good surface hardness and wear. It is the most widely used carburizing alloy available on the market.

When properly hardened and tempered, 8620 carbon steel can also be used as high tensile steel (uncarburized), which can be used for a variety of applications requiring high tensile strength and adequate toughness.
